Lentil and Mushroom Soup

Ingredients

  • Red Lentils ⅓ cup
  • Potatoes 3 pieces
  • Champignon Mushrooms 8 pieces
  • Green Beans 5 oz
  • Carrot 1 piece
  • Onion 1 piece
  • Parsley ⅓ bunch
  • Salt 1 tablespoon
  • Freshly ground black pepper to taste
  • Vegetable Oil 2 tablespoons

Step-by-Step Guide

Step 1

Place 3 liters of water over medium heat. Meanwhile, wash and peel the potatoes, and cut them into cubes. When the water boils, add salt and the potatoes.

Step 2

Rinse the lentils and set them aside.

Step 3

Peel and finely chop the onion, wash and slice the champignon mushrooms. Heat the oil in a pan and sauté the onion until golden, then add the mushrooms, stir, and cover with a lid. Peel the carrot, grate it finely, and add it to the pan with the mushrooms. Stir and cover with a lid.

Step 4

Add the green beans to the pot. When the water starts boiling again, add the lentils and cook for 10 minutes.

Step 5

Season the mushrooms with a little salt and pepper, stir, add them to the pot, cover with a lid, and reduce the heat.

Step 6

Wash the parsley. Finely chop the stems and add them to the soup. Simmer the soup for another 2 minutes and turn off the heat. Finely chop the parsley leaves. Serve the soup in bowls and sprinkle with parsley. Enjoy your meal!
