Sift the flour into the yolks and whip again to avoid lumps.

Gently fold the egg whites into the yolk mixture, mixing until smooth, being careful not to deflate the airiness.

To shape the cookies properly, you can use a pastry bag or a regular plastic bag with a cut corner. Place the dough on parchment paper, forming cookies.

You can sprinkle with granulated sugar or powdered sugar. To achieve perfect cookies, let them rest in this form for 1.5 to 2 hours.

Preheat the oven to 180°C (356°F) and place the baking sheet with the dough in for 10 minutes.
