  • Water 5 fl oz
  • Sugar 10 oz
  • Lemon to taste

Step-by-Step Guide

Step 1

Peel the citrus, divide into wedges, and let dry overnight or longer. If there are seeds, make a small cut on top of the wedge and remove them.

Step 2

In a pot, pour in 150 ml of water, add 250 grams of sugar, and cook for a couple of minutes. Place the dried wedges into the syrup and simmer on low heat for 5 minutes. It is best to add enough fruit so that they do not touch each other.

Step 3

Leave in the syrup for a day and then simmer for another 5 minutes. Remove the wedges from the hot syrup and place them on parchment paper to cool. You can leave them out for a couple of days on the kitchen counter, or you can dry them in the oven at the lowest temperature with the door slightly open. The dried wedges should be rolled in granulated sugar.
