
Lemon-Vanilla Pie

Description
This quantity of ingredients is designed for a tall pie with a diameter of approximately 8 inches or for a shorter pie with a larger diameter.
Ingredients
- Lemon 2 pieces
- Sugar 10 oz
- All-purpose flour 10 oz
- Vanillin ½ teaspoon
- Egg 3 pieces
- Butter 5 oz
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Grate the zest of the lemons using a fine grater (only the yellow part) and squeeze the juice from the lemons.
Step 3
Melt the butter, add 200 grams of flour, 80 grams of sugar, half of the zest, and half a teaspoon of vanillin. Mix well.
Step 4
Line the bottom of a 20 cm diameter pan with parchment paper and spread the dough evenly by hand, forming low walls about 2 cm high.
Step 5
Place in the oven and bake at 355°F for 5–10 minutes (until the dough is lightly browned).
Step 6
Reduce the temperature to 300°F.
Step 7
For the filling, mix the juice and remaining grated zest, the rest of the sugar, flour, vanillin, and eggs, and mix well.
Step 8
Bake for about 15 minutes. Then remove from the oven, let cool slightly, and dust with powdered sugar.
