Lemon shortbread cookies
Ingredients
- Butter 5 oz
- Sugar 5 oz
- Wheat Flour 10 oz
- Egg white 1 piece
- Lemon 1 piece
- Salt a pinch
Step-by-Step Guide
Step 1
Chop the butter with the flour until crumbly, add 75 g of sugar, salt, the grated zest of half a lemon, 1–2 teaspoons of lemon juice, and the egg. Knead the dough until it forms a ball. Shape the dough into a ball and refrigerate for 30 minutes.
Step 2
After 30 minutes, take the dough out of the refrigerator, roll it out, and cut out cookies.
Step 3
For the topping, mix the grated zest of half a lemon with the remaining sugar. Place this mixture on each cookie.
Step 4
Bake at 375°F for 10–15 minutes. Remove from the oven and let cool.
