  • Semolina ⅓ cup
  • 3.2% Milk 10 fl oz
  • Sugar 2 tablespoons
  • Fresh Berries to taste
  • White Beans 1 piece
  • Serviceberries to taste
  • Raspberry leaves to taste
  • Lemon 1 piece
  • Powdered Sugar ⅓ cup

Step-by-Step Guide

Step 1

Take the lemon, zest it without including the white pith, and squeeze out all the juice. Combine the juice and powdered sugar in a saucepan and reduce it to a syrup.

Step 2

Cut the vanilla bean in half lengthwise. Use the sharp edge of a knife to scrape out the black vanilla seeds from the pod.

Step 3

Combine the milk, sugar, lemon zest, vanilla seeds, and the pod in a saucepan, stir, place over medium heat, and bring the milk to a boil. Gradually sprinkle in the semolina while constantly stirring. Cook for about 7–8 minutes, stirring continuously. The consistency should be very thick.

Step 4

Remove the mixture from the heat, discard the vanilla pod, and quickly transfer the thick mixture into ramekins. Let the pudding cool at room temperature for a few minutes, then cover with foil or plastic wrap and refrigerate for 5 hours or overnight.

Step 5

When serving, take the ramekins with the pudding out of the refrigerator, remove the foil. Dip the ramekins in hot water for 1–2 minutes, cover the ramekins with a serving plate, and quickly invert the pudding onto the plate.

Step 6

Serve immediately, drizzled with lemon syrup, sprinkled with sifted powdered sugar, and garnished with berries.
