Ingredients
- Butter 2 tablespoons
- Vegetable Oil 1 tablespoon
- Long-Grain Rice 1 cup
- Green onions 4 stalks
- Garlic 3 cloves
- Lemon Juice 3 tablespoons
- Lemon Zest 1½ tablespoons
- Turmeric ¼ teaspoon
- Vegetable Broth 1 cup
- Milk 1 cup
- Salt to taste
- Ground Black Pepper to taste
- Dill 2 stalks
Step-by-Step Guide
Step 1
Melt the butter and vegetable oil in a pot.
Step 2
Sauté the green onions for one minute.
Step 3
Add the garlic and lemon zest. Continue cooking and stirring for thirty seconds or until fragrant.
Step 4
Add the rice. Season with turmeric, salt, and pepper, and sauté, stirring, for one minute.
Step 5
Mix in the vegetable broth, milk, and lemon juice. Try to do this in a way that prevents the milk from curdling due to the lemon juice, meaning there should be a pause between adding the liquids.
Step 6
Increase the heat and bring the mixture to a boil.
Step 7
Reduce the heat, cover the pot, and simmer for eighteen to twenty minutes or until the liquid has evaporated.
Step 8
Before serving, garnish with dill and green onions.
