Lemon Posset with Caramelized Figs
Ingredients
- Cream (40%) 20 fl oz
- Brown Sugar 10 oz
- Lemon 2½ pieces
- Fig 6 pieces
- Ladyfinger Cookies to taste
Step-by-Step Guide
Step 1
Grate the lemon zest finely and squeeze the juice.
Step 2
In a saucepan, combine the lemon juice and zest, cream, and 150 grams of sugar. Bring to a boil while stirring, then remove from heat. Pour into 8 cups or ramekins, cover with plastic wrap, and refrigerate for 8 hours or overnight.
Step 3
Some time before serving, preheat the grill in the oven.
Step 4
Cut the figs into quarters and place them cut side up on a baking sheet, then sprinkle with sugar. Place under the grill for 3-4 minutes until the sugar caramelizes and gives the figs a unique color. Let cool to room temperature.
Step 5
Garnish each posset with figs and serve with ladyfinger cookies.
