
Lemon Muffins with Zest

Description
Butter should be softened; eggs, milk, and lemon should be at room temperature. If you omit the lemon from this recipe, you will have a classic muffin recipe that serves as a base for making muffins with berries, fruits, nuts, or anything else.
Ingredients
- Wheat Flour 1½ cups
- Sugar ½ cup
- Butter 5 oz
- Farm fresh eggs 2 pieces
- Milk 5 fl oz
- Lemon 2 pieces
- Baking Powder 1 teaspoon
- Salt a pinch
Step-by-Step Guide
Step 1
Beat the eggs with sugar and salt, add the butter, lemon zest, and juice of one lemon, and mix well.
Step 2
Add one cup of flour, add the baking powder, and mix.
Step 3
Pour in the milk, stir, and add the remaining flour. Mix thoroughly again.
Step 4
Spoon the batter into a mold, place it in a preheated oven at 390°F, and bake for 20–25 minutes.
