Ingredients
- Sugar 5 oz
- Butter 5 oz
- Meyer Lemon Juice 2 tablespoons
- Wheat Flour 15 oz
- Salt ½ teaspoon
- Baking Powder ½ teaspoon
- Farm fresh eggs 4 pieces
- Sour Cream 5 tablespoons
- Citrus Zest Mix 1½ tablespoons
- Powdered Sugar 0 oz
Step-by-Step Guide
Step 1
In a large bowl, mix together the flour, sugar, baking powder, and salt.
Step 2
In another bowl, combine the eggs, sour cream, room temperature butter, lemon zest, and lemon juice.
Step 3
Mix with the dry ingredients until smooth.
Step 4
Fill the muffin cups ¾ full.
Step 5
For the crumble topping, mix the flour, sugar, and butter until the mixture resembles crumbs.
Step 6
Bake for 20–25 minutes at 355°F. Check for doneness with a toothpick - if it comes out dry when inserted into the center of a muffin, they are ready.
Step 7
Cool for 5 minutes before removing from the pan.
Step 8
In a separate bowl, mix the powdered sugar and lemon juice for the glaze and drizzle over the warm muffins.
Step 9
Serve warm.
