Lemon Muffins
Ingredients
- Wheat Flour 1½ cups
- Sugar ½ cup
- Farm fresh eggs 2 pieces
- Butter 5 oz
- Milk 5 fl oz
- Lemon 2 pieces
- Salt a pinch
- Activated Baking Soda 1 teaspoon
Step-by-Step Guide
Step 1
First, beat the eggs with sugar and salt. I recommend beating the eggs for about 5 minutes first, then adding the sugar and salt and beating for another 5 minutes.
Step 2
Next, add the softened butter and continue beating for another 2–3 minutes.
Step 3
Zest two lemons and squeeze the juice from one lemon. Add the zest and juice to the egg mixture and mix well.
Step 4
Sift the flour, mix it with the baking soda, and add half of the flour to the batter. Mix again.
Step 5
Pour in the room temperature milk.
Step 6
Then add the second half of the flour, mixing the batter until smooth.
Step 7
Finally, grease the muffin tin with butter or insert paper liners, fill the cups with batter, covering 2/3 of each cup. Leave some space for the muffins to rise and place in a preheated oven at 375°F, baking for 25 minutes until done.
