- Shortbread Cookies 4 pieces
- Brown Sugar 2 tablespoons

- Cream (40%) 5 fl oz
- Egg white 3 pieces
- Golden caster sugar 0 oz
- Gelatin 0 oz
- Coconut flakes 0 oz
Step-by-Step Guide
Step 1
In a bowl, mix 3 crushed cookies, cornflakes, and brown sugar. Pour in melted butter, mix thoroughly, and press 1/3 of the mixture into the bottom of a pan greased with peanut butter.
Step 2
Whip the cream. Separate the egg yolks from the whites.
Step 3
In a bowl, combine the egg yolks, grated zest, and juice of the lemon and lime, add golden sugar, sprinkle in the gelatin, and place over a double boiler for 10 minutes. Stir until the mixture thickens, remove from heat, and add the whipped cream.
Step 4
Beat the egg whites until stiff peaks form. Fold the whipped egg whites into the lemon-lime mixture. Pour into the pan and sprinkle with the remaining cookies. Cover with foil and refrigerate overnight.
Step 5
Before serving, remove the pie from the pan and cut into pieces.
