Lemon kefir muffins
Ingredients
- Lemon 1 piece
- Sugar 1½ glasses
- Chicken Egg 3 pieces
- Wheat Flour 2 glasses
- Vegetable Oil 1 glass
- Dry yeast 1½ spoons
- Kefir 1 glass
Step-by-Step Guide
Step 1
Grate the zest from the lemon, about 1–2 teaspoons.
Step 2
Beat the eggs with sugar.
Step 3
Add the oil, lemon juice, and grated zest, whisking continuously at medium speed.
Step 4
Combine the flour and yeast. Sift into the egg mixture and mix well.
Step 5
Add the kefir, gently mix once more, and divide into the molds.
Step 6
Place in a preheated oven at 390°F for 25 minutes — they will rise noticeably right away.
