- Sweetener to taste
- Water 5 fl oz

Step 1
Boil the water, add the lemon zest, and let it steep covered for 10–15 minutes, then strain.
Step 2
In 100 g of the hot infusion, add the gelatin that has been soaked in cold water, let it dissolve, then add lemon juice and sweetener, strain, pour into a mold, and chill.
Step 3
For a moment, dip the mold with the cooled jelly into hot water, unmold the jelly onto a plate, and drizzle with the remaining syrup.
