Description
For this jam, you should choose fresh lemons that are not dried out, firm, and without any dents. They should contain enough juice; if a lemon feels light, it means it has little juice.

- Lemon 20 oz
- Sugar 20 oz
Step-by-Step Guide
Step 1
Wash the lemons, dry them, and cut them into large pieces with the peel on. Remove the seeds, as they can impart bitterness and create an unpleasant crunch.
Step 2
Pass the lemons through a meat grinder.
Step 3
Combine the lemon puree with sugar and let it sit for 2 hours.
Step 4
Place the lemon mixture over heat, bring to a boil, and cook for 10 minutes.
Step 5
Remove the jam from the heat and let it cool completely.
Step 6
Repeat the boiling and cooling process two more times.
Step 7
Sterilize the jam jar over steam for 10 minutes. Then, dry it off.
Step 8
Bring the jam to a boil one last time and transfer it to a jar. Seal it with a lid or can it.
