Ingredients

- Sugar 0 oz
- Gelatin 0 oz
- Chocolate 5 oz
- 10% cream 5 fl oz
- Clear Apple Juice 5 fl oz
- Kaffir Lime Leaves 1 piece
- Lemongrass 1 piece
- Pectin 0 oz
- Oranges 0 oz
- Lime 0 oz
- Lemon 0 oz
- Yuzu Juice 0 fl oz
- White Chocolate 10 oz
- Cocoa Powder 5 oz
- Yellow Sugar 0 oz
Step-by-Step Guide
Step 1
White chocolate mousse: soak gelatin in cold water.
Step 2
Bring milk and 5 grams of sugar to a boil, mix the remaining 5 grams with the yolk.
Step 3
Pour the boiling milk into the mixture and place on low heat.
Step 4
Heat to 185°F, cool, strain, and add gelatin.
Step 5
Melt the chocolate in a water bath, pour in the sauce, and blend.
Step 6
Whip the cream separately and combine all prepared ingredients into the mousse.
Step 7
Lemon jelly: bring apple juice, lemongrass, and lime leaves to a boil in a saucepan.
Step 8
Let the mixture steep for 10 minutes, then strain.
Step 9
Add sugar (30 g) with pectin, bring to a boil, add lemon pulp, bring to a boil again, remove from heat, and add yuzu juice.
Step 10
Pour the prepared filling into half-spheres and place in the freezer.
Step 11
Velvet coating: melt chocolate and cocoa butter in a water bath.
Step 12
Add coloring and blend.
Step 13
Assemble the dessert: divide the mousse into two parts: pour the first part into a silicone lemon-shaped mold, place the jelly on top, and cover with the remaining mousse through the opening.
Step 14
Place in the freezer for 8 hours.
Step 15
Remove the dessert from the mold, cover with the 'velvet' heated to 90°F, and serve.
