Lemon curd (lemon cream)
Ingredients
- Lemon 4 pieces
- Chicken Egg 4 pieces
- Butter 0 oz
- Sugar 1 glass
Step-by-Step Guide
Step 1
Zest 1-2 lemons and mix it with sugar (I used the zest of two lemons because I love a more pronounced and tangy lemon flavor).
Step 2
Squeeze the juice from the lemons, add it to the sugar with the zest, and mix well.
Step 3
Lightly whisk the eggs with a whisk. The yolk and white should be well combined, but not overmixed.
Step 4
Add the eggs to the lemon-sugar mixture and let it sit for 20–30 minutes.
Step 5
After 20–30 minutes, strain the future cream through a fine sieve, pour it into a saucepan, add the butter, and place it over medium heat. Cook, stirring constantly, until the curd thickens (I didn't strain it because I love lemon zest).
Step 6
Once the curd has cooled, divide it into jars.
