Lemon Curd Dessert without Flour
Ingredients
- Sugar 5 oz
- Chicken Egg 2 pieces
- Whole egg 2 pieces
- Meyer Lemon Juice 5 fl oz
- Citrus Zest Mix 1 tablespoon
- Butter 5 oz
Step-by-Step Guide
Step 1
Beat the softened butter with sugar for about 2 minutes.
Step 2
Gradually add the eggs and egg yolks, and beat for another minute.
Step 3
Add lemon juice — the mixture may become lumpy, but this will resolve during heating.
Step 4
In a medium pot with a thick bottom, slowly heat the mixture until smooth, stirring constantly with a whisk.
Step 5
When the mixture becomes smooth, increase the heat to medium and continue stirring until it thickens. Do not bring to a boil!
Step 6
Remove the curd from the heat and add the zest. Transfer it to a suitable container and place plastic wrap on top to prevent a skin from forming while it cools.
Step 7
Place it in the refrigerator. Once it cools down, it will thicken even more.
