Ingredients
- Butter 5 oz
- Sugar 5 oz
- Chicken Egg 4 pieces
- Lemon 3 pieces
- Wheat Flour 5 oz
- Baking Powder 2 spoons
- Salt a pinch
- Meyer Lemon Juice 5 fl oz
- Yogurt powder 10 oz
- Fresh Mint 1 bunch
- Powdered Sugar 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 320°F. Combine the butter and sugar until smooth. Gradually beat in the eggs one at a time. In a separate bowl, mix the zest of two lemons, flour, baking powder, and salt. Then, combine both mixtures.
Step 2
Pour the batter into the molds; it's best to use paper liners in the muffin tin. Bake for 25 minutes. Mix lemon juice with 100 grams of powdered sugar and soak the finished muffins with this mixture while they are still warm.
Step 3
For the cream, whip 10% yogurt with powdered sugar (100 grams) and decorate the cupcakes using a piping bag. You can top them with mint leaves and lemon slices.
