
Lemon Cream for Berries and Fruits

Description
This cream is excellent served with fresh strawberries, pineapples, and apples.
Ingredients
- Sugar 0 oz
- Egg white 1 piece
- Meyer Lemon Juice 0 fl oz
- Water 0 fl oz
- Corn Starch 0 oz
- Vanilla extract 0 fl oz
- Whipped Cream 10 fl oz
Step-by-Step Guide
Step 1
In a bowl, whisk the egg, 25 g of sugar, and lemon juice.
Step 2
In a saucepan, combine the remaining sugar, water, and cornstarch. Bring to a boil and cook for 30 seconds until slightly thickened.
Step 3
Remove from heat and slowly whisk in the egg mixture. Place over medium heat and cook for 2 minutes until thickened, stirring.
Step 4
Remove from heat and add vanilla. Cool down.
Step 5
Mix with whipped cream and chill again.
