Lemon Buns
Ingredients
- Wheat Flour 20 oz
- Salt to taste
- Water 10 fl oz
- Lemon 2 pieces
- Dry yeast 0 oz
Step-by-Step Guide
Step 1
Grate the lemon zest finely.
Step 2
Rub the yeast into the flour until a uniform crumb forms. Add salt, then water. Knead the dough for 2 - 3 minutes, gradually adding the zest, until it starts to come together. Leave it to rise for 1 hour.
Step 3
Place the dough on a lightly floured surface and cut it into 10 pieces. Shape each piece into a ball, cover with a towel, and let it rest for 5 minutes, then shape into buns.
Step 4
Line a baking sheet with a clean towel and lightly sprinkle with flour. Place the buns seam side down. Cover the buns with another towel and let them rise in a warm place for 1 hour. The buns should double in size.
Step 5
Transfer the buns to a flat baking tray. Using a sharp knife, make a long cut along the top of each bun and three small cuts across.
Step 6
Preheat the oven to 480°F, then reduce the heat to 430°F.
Step 7
Place the buns in the oven and bake for 10 minutes (until golden brown).
