Lemon Balm Sorbet
Ingredients
- Water 5 fl oz
- Sugar 5 oz
- Lemon Balm 2 bunches
- Citrus Zest Mix 1 piece
- Meyer Lemon Juice 0 fl oz
- Egg white 2 pieces
Step-by-Step Guide
Step 1
Boil a syrup made from water and sugar. Let it simmer for a couple of minutes.
Step 2
Add lemon balm, the zest of one lemon, and the juice of half a lemon to the syrup. Cool down. Strain through a sieve.
Step 3
Whip the egg whites to a stiff peak. Add to the cooled syrup.
Step 4
Place in the freezer, stirring with a fork at least every hour until fully crystallized. Leave to chill overnight.
