- Lemon 1 piece
- Gelatin 0 oz
- Sugar ¾ cup
- Water 15 fl oz
Step-by-Step Guide
Step 1
Pour 500 ml of water into a saucepan, add sugar, stir, and bring to a boil. In the hot syrup, add the zest from half a lemon and gelatin. Stirring constantly with a spoon, bring the syrup back to a boil and add lemon juice.
Step 2
Pour the mixture into a bowl placed in cold water or on ice, and whip until a uniform frothy mass is obtained.
Step 3
When the mixture starts to thicken, stop whipping, quickly pour the mousse into molds, and chill.
