Description
A classic honey cake with spices, infused with the aroma of ginger, cinnamon, and other sweet spices. For this reason, it is popular during the Jewish New Year Rosh Hashanah — as it is believed that to ensure a bountiful and good year, sweet and hearty dishes should be served at the festive table.
Ingredients
- Wheat Flour 5 oz
- Sugar 5 oz
- Grated Ginger Root 1 teaspoon
- Cinnamon 1 teaspoon
- Honey 10 oz
- Activated Baking Soda 1 teaspoon
- Orange zest 2 teaspoons
- Vegetable Oil 4 tablespoons
- Chocolate eggs 2 pieces
- Orange juice concentrate 5 tablespoons
- Grated Ginger Root 2 teaspoons
- Spices to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Grease a rectangular baking dish with oil and line it with parchment paper. In a large bowl, mix the flour, sugar, ginger, cinnamon, spices, and baking soda.
Step 2
Make a well in the center of the flour mixture and pour in the honey, oil, add the zest, and pour in the eggs. Using a wooden spoon (or an electric mixer), beat everything together, then add the orange juice and chopped ginger.
Step 3
Pour the batter into the prepared dish and bake for 50 minutes, until the cake is firm and springy.
Step 4
Let the cake cool in the pan, then turn it out and wrap it in foil. Store at room temperature for 2–3 days before serving.
