Leek Puree Soup
Ingredients
- Leek 2 stalks
- Potato 3 pieces
- Butter 0 oz
- Onion 1 head
- 10% cream 5 fl oz
- Orange Bell Peppers 1 piece
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Melt the butter in a deep pot and sauté the finely chopped onion. After a couple of minutes, add the sliced leek and cover the pot with a lid.
Step 2
Leave the mixture on low heat for 7–10 minutes (until partially cooked), then add the diced potatoes, cover with drinking water (just enough to cover the vegetables), and simmer until cooked, seasoning with salt and pepper.
Step 3
Remove the soup from heat, place it in a blender, and add the cream. Blend until smooth.
Step 4
Serve the soup with diced bell pepper on top.
