
Leek and Potato Soup

Description
The soup can be frozen in portions and reheated as needed. I like to add a bit of butter to the bowl just before serving.
Ingredients
- Leek 25 oz
- Potato 25 oz
- Garlic 1 clove
- Onion 1 piece
- Salt a pinch
- Water 0 qt
- Ground clove a pinch
Step-by-Step Guide
Step 1
Wash the leek and potato. Peel the garlic and onion. Cut the potato, leek, onion, and garlic into small cubes. Bring the water to a boil in a large pot and add all the vegetables. Cover with a lid.
Step 2
Cook for at least 30 minutes over medium heat. Stir regularly. When the potato is well cooked, remove the pot from the heat. Pour the contents of the pot into a blender or mixer.
Step 3
The soup should have a smooth consistency, like a liquid puree. Add salt and pepper. Serve hot.
