Ingredients
- Bone marrow bones 5 oz
- Meat 0 oz
- Onion 0 oz
- Carrot 0 oz
- Egg white 0.2 pieces
- Water 20 fl oz
Step-by-Step Guide
Step 1
Chop the bones finely, cover with cold water, and bring to a boil quickly. Simmer the bones for 4–5 hours.
Step 2
Pass the meat through a meat grinder, mix with the egg white and cold water (50 grams), add to the broth, and boil for 1 hour.
Step 3
Slice the vegetables thinly, sauté (without fat) until browned, and add to the broth 40 minutes before it's done.
Step 4
Strain the finished broth through a cloth, remove the fat, and serve.
