Lean Borscht with Thyme and Anise
Ingredients
- Star anise 1 teaspoon
- Salad Potatoes 3 pieces
- Carrot 1 piece
- Onion 1 piece
- Beetroot 1 piece
- Potato 1 piece
- Turmeric 1 teaspoon
- Thyme 1 sprig
- Salt to taste
- Meyer Lemon Juice to taste
Step-by-Step Guide
Step 1
Cut the potatoes into small sticks, place them in a pot with water, and bring to a boil.
Step 2
Grate the carrot and onion on a coarse grater and sauté them in olive oil.
Step 3
Add salt, turmeric, and anise.
Step 4
Add the sautéed vegetables to the pot with boiling potatoes.
Step 5
Then grate the beetroot on a coarse grater and add it to the pot. Cook for a few minutes. The beetroot can be any type: roasted, boiled, or raw.
Step 6
Since all the vegetables are finely chopped, everything cooks very quickly. By the time the beetroot is added, the vegetables are already cooked.
Step 7
Therefore, at the end, after adding the beetroot, place one chopped tomato into the soup, add a sprig of thyme, and lemon juice. The amount of juice is best determined to taste. Everyone has their preference. Then the law of any soup comes into play: the longer the soup infuses, the tastier it becomes.
