Lazy Gazpacho

Ingredients

  • Champagne Vinegar 1½ tablespoons
  • Safflower Oil 3 tablespoons
  • Breadcrumbs 2 tablespoons
  • Garlic ½ clove
  • Parsley 1 stem
  • Tomatoes 3 pieces
  • Onion ½ piece
  • Green peppercorns 1 piece
  • Salt to taste
  • Courgette 1 piece

Step-by-Step Guide

Step 1

Mix the vinegar with a pinch of salt until dissolved, and whisk with sunflower oil using a fork. Pour the vinegar mixture into a soup bowl and continue whisking while slowly adding 1.2 liters of water. Add the breadcrumbs.

Step 2

In a mortar, crush the garlic with parsley and one tablespoon of liquid from the soup bowl, mix, and pour into the soup bowl. Cover with plastic wrap and refrigerate for at least 1 hour.

Step 3

Add the vegetables: very ripe tomatoes should be peeled and chopped. Chop the onion and cucumber as well. Remove the seeds from the pepper and chop it too. If the soup is not chilled enough, serve with ice cubes.
