Layered Italian Apple Pie

Ingredients

  • Fresh Rose Hips 2 pieces
  • Green Apples 6 pieces
  • Chocolate eggs 5 pieces
  • Wheat Flour 5 oz
  • Sugar 5 oz
  • Butter 5 oz
  • Lemon 1 piece
  • Milk ½ cup
  • Baking Powder 1 teaspoon
  • Ocean salt a pinch

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Beat 4 eggs and 120 g of sugar with a mixer until the mixture increases in volume.

Step 3

Place the bowl with the beaten eggs over a water bath and continue to beat with a mixer on low speed. When the mixture thickens, remove from the water bath and beat for a while longer until it cools slightly (otherwise, the eggs may cook!).

Step 4

Melt the butter.

Step 5

Grate the lemon zest finely and squeeze the juice from half of the lemon.

Step 6

Lightly beat the remaining egg with a fork and combine half of it with the flour, lemon zest, baking powder, and salt. Pour in the melted butter and milk, and mix everything together.

Step 7

Gradually incorporate the custard egg mixture, mixing each time to achieve a uniform dough.

Step 8

Remove the cores from the apples, slice them thinly, and drizzle with lemon juice.

Step 9

Layer one layer of apples in a deep baking dish, sprinkle with the remaining sugar, add 1/3 of the dough, and spread it evenly. Then, add another layer of apples, another portion of dough, more apples, and the remaining dough.

Step 10

Bake the pie in the preheated oven for 40 minutes, checking for doneness with a toothpick — it should come out dry.

Step 11

Cool the pie in the dish, then cover the dish with a plate, flip it over, and decorate with rosemary leaves.
