Description
This recipe was shared with us by the head chef of a popular American restaurant.
Ingredients
- Butter 40 oz
- Whole egg 5 pieces
- Vodka 0 fl oz
- Vinegar essence 0 fl oz
- Water 1½ cups
- Salt to taste
- Citric Acid a pinch
- Vanilla salt to taste
- Wheat Flour 55 oz
Step-by-Step Guide
Step 1
In a bowl, pour in 1 kg of flour and grate 200 grams of butter.
Step 2
Add 4 egg yolks and mix until homogeneous.
Step 3
Add salt, citric acid, vodka, vinegar, and gradually pour in warm water. Knead the dough.
Step 4
Prepare the filling for the dough. Mix 200 grams of flour with 800 grams of butter until smooth.
Step 5
Roll out the dough and spread the prepared mixture over it. Cover and refrigerate for 30 minutes.
Step 6
Take out the dough, spread it again, and put it back in the refrigerator. Repeat this process two more times.
Step 7
Prepare the filling for the gata. Cream sugar with 150 grams of butter.
Step 8
Gradually add flour to the egg mixture to achieve a crumbly texture. You will need about 350 grams of flour for this.
Step 9
Add vanilla.
Step 10
Spread the filling over the rolled-out dough, completely covering the layer.
Step 11
Roll it up, brush with egg yolk, and cut diagonally.
Step 12
Place in a preheated oven at 390°F for 20 minutes.
