Layered Curd Pie
Ingredients
- Wheat Flour 4 cups
- Milk 1½ cups
- Cottage cheese 20 oz
- Dry yeast 0 oz
- Oranges 1 piece
- Raisins 5 oz
- Sugar ¾ cup
- Chocolate eggs 2 pieces
- Butter 5 oz
Step-by-Step Guide
Step 1
Dissolve the yeast in 0.5 cups of warm milk with 1 teaspoon of sugar. Set aside for 20 minutes until the mixture becomes frothy.
Step 2
Beat one egg with a fork and mix it with the remaining milk, sugar, salt, half of the softened butter, and the frothy yeast.
Step 3
Sift the flour into a bowl and, while stirring, pour in the resulting mixture. Transfer the dough to a floured surface and knead by hand for 10–12 minutes. Place back in the bowl, cover with a towel, and set in a warm place for 1.5–2 hours until the dough doubles in size.
Step 4
Prepare the filling. Rinse the raisins, pour boiling water over them, and let sit for 20 minutes. Then drain in a sieve.
Step 5
Caramelize the zest. Grate it from the orange using a coarse grater, pour boiling water over it for 6–7 minutes. Drain the zest in a sieve and sauté in heated butter for 5 minutes. Add 1 tablespoon of sugar and cook, stirring, until the sugar begins to caramelize. Remove from heat.
Step 6
Pass the cottage cheese through a sieve. Mash the yolk with the remaining sugar and mix with the cottage cheese, raisins, vanilla sugar, and caramelized zest.
Step 7
Knead the dough again and form small patties. Place 1 tablespoon of filling on each, pinch the edges, and let rise for 15 minutes.
Step 8
Preheat the oven to 355°F. Melt the remaining butter. Dip each bun in the butter and arrange them tightly in a round baking dish. Beat the remaining egg and brush it over the surface of the pie. Bake for 25–30 minutes.
