Description

Layered Apple and Almond Pie à la Normande

Ingredients

  • Puff Pastry 20 oz
  • Apple 12 pieces
  • Ground Almonds 5 oz
  • Chopped almonds 0 oz
  • Egg white 2 pieces
  • Butter 5 oz
  • Wheat Flour 1 tablespoon
  • Powdered Sugar 5 oz
  • Cognac 1 tablespoon

Step-by-Step Guide

Step 1

Thaw and roll out the puff pastry.

Step 2

Slice the apples and sauté them in 50 grams of butter in a heavy-bottomed saucepan, then let cool.

Step 3

Grease a baking dish with butter, dust with flour, and line the bottom and sides with puff pastry. Place the prepared apples on top of the pastry, filling the dish three-quarters full.

Step 4

Cream 100 grams of softened butter with powdered sugar until white, beat in the eggs one at a time, and mix with flour and ground almonds. Spread the prepared batter over the apples and smooth it out. Place apple slices in the center and sprinkle the entire surface with chopped almonds.

Step 5

Bake the pie in a preheated oven for about 1 hour, covering with foil or damp parchment paper if necessary. Remove the finished pie from the oven, sprinkle with cognac, let cool, and remove from the dish.

Step 6

Dust the finished pie with powdered sugar.
