Description
This classic Italian dessert pairs wonderfully with lavender. To make the panna cotta truly infused with lavender, it's essential to steep the cream with fragrant flowers overnight—this way, they will impart all their aroma to the future dessert.
Ingredients
- 33% Cream 15 fl oz
- Lavender flowers 1 tablespoon
- Gelatin 0 oz
- Sugar 5 oz
- Vanilla extract 1 tablespoon
- Vegetable Oil to taste
- Lavender flowers to taste
Step-by-Step Guide
Step 1
Prepare the ingredients.
Step 2
Pour the cream into a saucepan, add the lavender, cover with a lid, and let it infuse in the refrigerator overnight.
Step 3
Strain the cream. If it has thickened, gently warm it up first, and discard the lavender.
Step 4
Soak the gelatin in cold water and let it sit for 5 minutes.

In a saucepan, add sugar and vanilla, then pour in the cream.
Step 6
Bring the contents of the saucepan to a boil and remove from heat.
Step 7
Squeeze out the gelatin and add it to the saucepan.
Step 8
Stir until the gelatin is completely dissolved.
Step 9
Strain the cream again through a sieve.
Step 10
Pour the contents of the saucepan into the molds. If you plan to unmold the panna cotta, grease the molds with vegetable oil. Place in the refrigerator for 3–4 hours until fully set.
Step 11
Serve, garnished with a sprig of lavender.
