Lavender Macarons
Ingredients
- Almond 5 oz
- Powdered Sugar 10 oz
- Wheat Flour 0 oz
- Red Food Coloring to taste
- Milk 1 tablespoon
- Honey 2 tablespoons
- Mascarpone Cheese Unagrande 5 oz
- Lavender flowers 2 tablespoons
- Egg white 5 oz
Step-by-Step Guide
Step 1
Sift 180 grams of powdered sugar with almond flour and all-purpose flour several times.
Step 2
Whip the egg whites with 60 grams of powdered sugar until stiff peaks form.
Step 3
Sift the dry ingredients into the egg whites. Gently fold in with a spatula from top to bottom.
Step 4
Add the food coloring, mix, and pipe the macarons onto parchment paper using a piping bag.
Step 5
Tap the baking sheet on the table once (not too hard) to make the surface more even. Let them sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 295°F. Bake the macarons for 10 minutes.
Step 6
For the cream, beforehand soak 1 tablespoon of lavender in 1 tablespoon of milk, allowing the milk to absorb the lavender flavor.
Step 7
Then whisk together the mascarpone, strained milk, and honey.
Step 8
Sandwich the cream between two macaron halves, place them in a box, and refrigerate for a day.
