Lamb Soup with Peas, Meatballs, and Tomato
Ingredients
- Lamb 20 oz
- Pea shoots 5 oz
- Rice 5 oz
- Onion 2 heads
- Tomatoes 10 oz
- Carrot 1 piece
- Egg white 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Herbs 1 bunch
Step-by-Step Guide
Step 1
Soak the peas overnight.
Step 2
Separate the lamb meat from the bones. Boil the bones to make broth.
Step 3
Strain the broth, bring it to a boil, add the peas, and cook until done. Season with salt.
Step 4
Boil the rice until half-cooked.
Step 5
Pass the meat through a meat grinder, add the rice, black pepper, salt, raw egg, and mix thoroughly, then form into meatballs.
Step 6
Chop the onion and sauté it with the broth. Add to the soup. Cook for 3 minutes.
Step 7
Grate the carrot on a coarse grater. Add to the soup. Cook for 5 minutes.
Step 8
Remove the skin from the tomatoes and add them to the soup. Cook for 10 minutes.
Step 9
Sprinkle the finished soup with chopped herbs.
