Kufta-Bozbash with Mint
Ingredients
- Boneless Lamb Leg 20 oz
- Fat Tail Fat 0 oz
- Rice 5 oz
- Pea shoots 10 oz
- Plums 5 oz
- Salad Potatoes 3 pieces
- Onion 2 heads
- Salt to taste
- Saffron to taste
- Ground Black Pepper to taste
- Mint 1 bunch
Step-by-Step Guide
Step 1
Soak the peas overnight.
Step 2
Separate the meat from the lamb bones. Boil the bones to make broth.
Step 3
Strain the broth, bring it to a boil, add the peas, and cook until done. Season with salt.
Step 4
Pass the lamb meat through a meat grinder, combine it with the onion, add salt, pepper, rice, and mix thoroughly. Form balls from the resulting mixture, placing a pitted plum in the center of each.
Step 5
Drop the meatballs into the soup.
Step 6
Add the chopped potatoes and onion to the soup. Cook for 30 minutes.
Step 7
Sprinkle the finished soup with chopped mint.
