Kozinaki, dear friends! We made them from walnuts, but you can use seeds, almonds, peanuts—whatever you like.

Bring the honey to a boil for the fourth time and add the nuts.

It's important to stir them continuously, or they may stick to the bottom.

Place the nut and honey mixture onto a wooden board and shape it into a patty about 1.5 centimeters thick. The caramel is very hot, so it's essential to wet your hands with ice-cold water to avoid burns.
