Description
In Komi borscht, it is customary to add kefir and millet, which makes it quite different from traditional, ordinary homemade borscht. Sour cream and potatoes, similar in essence, are also included.
Ingredients
- Beef 30 oz
- Potato 8 pieces
- Beetroot 5 pieces
- Onion 4 pieces
- Carrot 2 pieces
- Millet 1 glass
- Kefir 15 fl oz
- Bay leaf to taste
- Green peppercorns to taste
- Ground Black Pepper to taste
- Salt to taste
- Sour Cream to taste
Step-by-Step Guide
Step 1
Cut the meat and immerse it in 3 liters of cold water. Bring to a boil, skim off the foam, and simmer on low heat for 1 to 2 hours. Then strain the broth, return the meat, and place it back on the heat.
Step 2
Once the broth comes to a boil, add the rinsed millet, potatoes, and the beets and carrots cut into thin strips. Cook until the vegetables are tender.
Step 3
Before the cooking is finished, add kefir, salt, and spices. Serve with sour cream and finely chopped onion.
