
Kharcho with Tkemali

Description
Instead of tkemali, you can add: cooked and pureed sour cherries, peeled and sliced tomatoes, tomato puree, pomegranate juice, or wine vinegar.
Ingredients
- Beef 20 oz
- Onion 4 heads
- Tkemali 1 glass
- Garlic 4 cloves
- Mild Chili Spice 1 piece
- Cilantro to taste
- Parsley to taste
- Bay leaf 2 pieces
- Khmeli-suneli 2 spoons
- Salt to taste
- Rice 0 oz
Step-by-Step Guide
Step 1
Cut the fatty beef into small pieces, cover with 2.5 liters of cold water, and simmer for about 2 hours over medium heat.
Step 2
Add the rinsed rice, finely chopped onion, and a bunch of parsley and cilantro (2 sprigs each) tied together.
Step 3
10–15 minutes before the cooking is finished, add crushed garlic, green chili peppers, finely chopped parsley and cilantro, tkemali sauce, khmeli-suneli spice mix, bay leaf, and salt.
Step 4
When serving, sprinkle with cilantro and parsley.
