
Kharcho with Plums

Description
Kharcho is primarily made from beef brisket, but it can also be substituted with lamb brisket. Fresh tomatoes can be replaced with 2 tablespoons of tomato puree.
Ingredients
- Meat 20 oz
- Onion 2 pieces
- Garlic 3 cloves
- Tomatoes 5 oz
- Rice ½ cup
- Plums 0 oz
- Salt to taste
- Green peppercorns to taste
- Cilantro to taste
- Parsley to taste
- Dill to taste
Step-by-Step Guide
Step 1
Wash the meat, cut it into small pieces, aiming for 3–4 pieces per serving, place it in a pot, cover with cold water, and bring to a boil. Skim off any foam that appears on the surface.
Step 2
After 1.5–2 hours, add finely chopped onion, crushed garlic, rice, sour plums, salt, and pepper, and continue cooking for another 30 minutes.
Step 3
Sauté the tomatoes in oil or fat taken from the broth, and add them to the soup 5–10 minutes before the cooking is finished.
Step 4
When serving, sprinkle with finely chopped cilantro, parsley, or dill.
