Keto Tacos with Yogurt-Garlic Filling
Ingredients
- Grated Pecorino Pepato Cheese 8 tablespoons
- Tomatoes ½ piece
- Garlic 4 cloves
- Pink Himalayan Salt to taste
- Ground Black Pepper to taste
- Mild Chili Spice to taste
- Leek 0 oz
- Natural Yogurt 0 oz
- Arugula 1 bunch
- Avocado ½ piece
Step-by-Step Guide
Step 1
Spread the cheese on a baking sheet lined with parchment paper in a thin layer to form a disc.
Step 2
Finely chop the leek. Use a spoon to scoop out the flesh from the tomato.
Step 3
Add salt.
Step 4
Press 2 cloves of garlic through a garlic press. Mix well.
Step 5
Spread the tomato-garlic mixture around the perimeter of the cheese disc. Add pepper.
Step 6
Place in a preheated oven at 355°F for 5 minutes.
Step 7
Chop the herbs into the yogurt, add salt and pepper.
Step 8
Press the garlic using a garlic press.
Step 9
Sprinkle cheese on top of the disc and return to the oven for 3–4 minutes.
Step 10
Add finely chopped avocado and 2 tablespoons of cheese to the filling, season with ground chili.
Step 11
Spread the filling on the cooled disc.
Step 12
Fold in half and serve.
