Ingredients
- Farm fresh eggs 3 pieces
- Semi-soft cream cheese 3 tablespoons
- Erythritol 1½ tablespoons
- Spinach 0 oz
- Nutmeg a pinch
- Salt a pinch
- Olive Oil to taste
- Butter to taste
Step-by-Step Guide
Step 1
In a deep bowl, combine the eggs and cream cheese.
Step 2
Add the chopped spinach.
Step 3
Add salt.
Step 4
Add nutmeg.
Step 5
Then add erythritol.
Step 6
Whisk vigorously with a whisk or mixer.
Step 7
Grease the skillet with olive oil. Place it over high heat.
Step 8
Pour a small amount of the mixture and spread it evenly in the skillet.
Step 9
Once the bottom is browned, flip it and reduce the heat.
Step 10
When the second side is browned, transfer it to a plate.
Step 11
Repeat these steps for each pancake. Brush the finished ones with a small piece of butter.

Once all pancakes are ready, serve immediately.
