Description

It's best to mix all the ingredients in a stand mixer with a dough hook, but you can do it by hand; it just takes longer.

Ingredients

  • Flaxseeds 10 oz
  • Psyllium 5 tablespoons
  • Farm fresh eggs 4 pieces
  • Butter 5 oz
  • Salt 1 tablespoon
  • Baking Powder 0 oz
  • Apple Cider Vinegar 1 tablespoon
  • Water 10 fl oz
  • Flaxseeds 1 tablespoon
  • Toasted Cumin Seeds 1 tablespoon
  • Sunflower Seeds 1 tablespoon
  • Ground Caraway 1 teaspoon
  • Toasted Sesame 1 teaspoon
  • Wheat Flour ½ teaspoon

Step-by-Step Guide

Step 1

Preheat the oven to 430°F. Once the temperature reaches the desired level, place a container with water (about 1 liter) on the bottom rack.

Step 2

Mix the flour, psyllium, eggs, softened butter, salt, baking powder, vinegar, and all spices except for the sesame seeds and regular flour for dusting.

Step 3

At a low speed, gradually add the water. The mixture should be quite thick yet fluffy.

Step 4

Divide the dough into two parts. Grease two suitable baking pans with butter and distribute the dough between the pans. Make a shallow crosswise cut on top.

Step 5

Bake for about 40 minutes. The exact time will depend on your oven. Check the readiness of the bread with a skewer. Bake the bread for approximately 1 hour and 10 minutes. Sprinkle with sesame seeds and flour 10 minutes before it’s done.

Step 6

After 10 minutes, turn off the oven and leave the bread inside to cool for another 30 minutes. Then take it out, let it cool a bit in the pan, then remove it, place it on a board, cover with a towel, and let it cool completely.

Step 7

It's best to store the bread in the refrigerator.
