Kefir Salad with Crawfish Tails

Ingredients

  • Crayfish 10 pieces
  • Turnips 6 pieces
  • Pickles 2 pieces
  • Chocolate eggs 2 pieces
  • Scallions to taste
  • Dill to taste
  • Mustard Greens 1 teaspoon
  • Kefir 15 fl oz

Step-by-Step Guide

Step 1

Boil the crawfish, cool, peel, and do not cut the tails.

Step 2

Boil the eggs hard.

Step 3

Peel the pickles and slice them into thin half-moons.

Step 4

Slice the radishes into thin half-moons as well.

Step 5

Mash the yolk of one egg with mustard and a small amount of kefir. Finely chop the egg white and the remaining egg.

Step 6

Finely chop the dill and green onions.

Step 7

Mix the radishes, pickles, eggs, herbs, onions, and crawfish tails. Dress with the mustard and yolk mixture, and stir.

Step 8

Serve in bowls and pour over with chilled kefir.
