Description

Kefir pancakes have a pleasant tang that pairs wonderfully with savory fillings, such as caviar. This delightful recipe was passed down to us from a friend.

Ingredients

  • Kefir 0 qt
  • Wheat Flour 20 oz
  • Chicken Egg 3 pieces
  • Sugar 3 spoons
  • Salt ½ spoons
  • Citric Acid ⅓ spoons
  • Activated Baking Soda 1 tablespoon
  • Butter to taste
  • Pork fat 1 piece
  • Sour Cream to taste
  • Red Caviar to taste

Prepare all the ingredients.

Pour the kefir into a saucepan, add sugar, salt, and citric acid. Warm over low heat, stirring until the sugar dissolves, up to a maximum of 105°F.

In a large bowl, add the flour, reserving a little.

Pour half of the kefir mixture into the flour and mix well.

Add the eggs to the dough and mix well.

Pour in the remaining kefir and mix again. The batter should be smooth, with a consistency similar to that of thick yogurt. If necessary, add more flour to achieve the desired consistency.

Add baking soda, stir, and let it sit for 10–15 minutes.

Heat the skillet with the lid over medium-high heat. Grease the bottom with lard using a fork.

Pour a portion of the batter onto a hot skillet and spread it evenly. Cover with a lid and cook for 1-2 minutes.

Flip it over and bake for another 30 seconds.
