Soups • Russian
Description
Kefir Okroshka is a refreshing cold soup, perfect for hot summer days. Made with a base of kefir, this dish is typically prepared with diced vegetables like cucumbers, radishes, and potatoes, along with fresh herbs such as dill and green onions. Add some boiled eggs and a splash of lemon juice for extra flavor. It's a light, nutritious meal that can be enjoyed on its own or served alongside some crusty bread. Perfect for a picnic or a casual lunch at home!
Ingredients
- Potato 2 pieces
- Scallions 1 bunch
- Dill to taste
- Parsley ½ bunches
- Chicken Egg 2 pieces
- Radish 6 pieces
- Cucumbers 2 pieces
- Kefir 0 qt
- Ham 15 oz
- Salt to taste
Step-by-Step Guide
Step 1
Prepare shaped ice in advance. To do this, rinse a sprig of dill, pat it dry with a paper towel, and separate it into small sprigs. Place one sprig in each compartment of the ice tray, fill with clean water, and put the tray in the freezer.
Step 2
Wash the potatoes, boil them with their skins on, let them cool, peel them, and cut them into small cubes.
Step 3
Wash the cucumbers, peel them if necessary (if the skin is too thick and rough), and cut them into small cubes.
Step 4
Hard boil the eggs, cool them down, peel, and chop finely.
Step 5
Chop the ham into small pieces.
Step 6
Wash the radishes, dry them with a paper towel, trim the ends, and slice them into thin rounds.
Step 7
Rinse the herbs, dry them, and chop finely.
Step 8
Place all the prepared ingredients in a large deep bowl, season with salt, and mix well. Pour the kvass over the okroshka and mix again.
Step 9
Pour the okroshka into bowls and add 2–3 ice cubes to each bowl, depending on the size of the cubes.
