Ingredients
- Matsoni 15 fl oz
- 33% Cream 10 fl oz
- Gelatin 0 oz
- Sugar 5 oz
- Cinnamon 0 oz
- Nutmeg 0 oz
- Kozinaki 0 oz
- Maple syrup 0 fl oz
Step-by-Step Guide
Step 1
Soak the gelatin in room temperature water.
Step 2
Add sugar, cinnamon, nutmeg, and softened gelatin to the cream. Heat until almost boiling, to 160°F.
Step 3
Meanwhile, whisk the matsoni to eliminate lumps.
Step 4
Pour the hot cream over the matsoni through a sieve, not allowing the nutmeg and cinnamon to pass through.
Step 5
Transfer to any convenient container and wait about 6 hours for it to set in the refrigerator.
Step 6
Garnish with kozunaki and syrup.
