Ingredients
- Coarsely Ground Rye Flour 1 cup
- Wheat Flour 1 cup
- Butter 0 oz
- Chocolate eggs 2 pieces
- Sour Cream 3 tablespoons
- Salad Potatoes 6 pieces
- Cream 5 fl oz
- Kefir 1 cup
Step-by-Step Guide
Step 1
The filling is regular mashed potatoes. Make it according to your recipe, or use this one: boil the potatoes, add 1 chicken egg or 3–4 quail eggs, butter, warmed cream, and a spoonful of sour cream.
Step 2
For the dough, mix the rye and wheat flour, kefir, and a little salt. If you want a more authentic Karelian dough, increase the proportion of rye flour at the expense of wheat flour. Roll the dough into a sausage shape, wrap it in plastic wrap, and put it in the refrigerator. Let it cool a bit.
Step 3
Cut off a small piece of dough and roll it into a round flatbread. You can cut a circle using a saucer or simply trim it with a knife. The appearance is not particularly important here. Place the mashed potatoes on the flatbread and spread it out. Then pinch the edges of the Karelits.
Step 4
The filling in the Karelits needs to be brushed with sauce. This is a very important step, as the crust formed by the sauce is the most delicious and beautiful part of the Karelits. In a bowl, mix 1 chicken egg and 2 tablespoons of sour cream. Using a brush, coat the mashed potatoes.
Step 5
Bake in a preheated oven at 355°F until a golden crust forms on the filling.
Step 6
Brush the finished Karelits with melted butter.
