Ingredients
- Carrot 15 oz
- Brown Sugar 15 oz
- Walnuts 0 oz
- Desiccated coconut 5 oz
- Ground Cinnamon 1 teaspoon
- Meyer Lemon Juice 1 tablespoon
- Vanillin a pinch
- Ground clove ½ teaspoon
Step-by-Step Guide
Step 1
Peel the carrots and grate them on a coarse grater.
Step 2
Sprinkle the carrots with sugar, mix, and leave overnight to let the carrots release their juice.
Step 3
Cook the carrots over low heat, adding cinnamon, cloves, vanillin, and lemon juice.
Step 4
After a while, the carrots will become transparent and the syrup will thicken.
Step 5
Turn off the heat and let it cool slightly. At this stage, add the chopped walnuts.
Step 6
Then, wetting your hands with cold water each time, shape the carrot mixture into balls.
Step 7
Immediately roll them in shredded coconut and place them on a plate.
Step 8
You can also shape them into a log and wrap in foil, and when cooled, cut into pieces.
